Taco Tuesday- Honey Chipotle Tacos

Guess who worked THIRTEEN hours today?? (Yes, that is 13 the number that comes after 12). 😉 We have a big project in the works and I knew this day was coming for a few weeks now. Luckily, I will get to sneak out a few hours early on Friday to make up for it!

One of the perks of working such a long day was having the hubs hard at work on a delicious and healthy dinner at home. Working late does not have to equal take out or pizza!

Tacos are a favorite in our house and they are probably one of the most versatile dinners out there. Tonight the hubs made his famous Honey Chipotle Tacos. YUM!

1 For the taco meat you will need:

1 pound of organic chicken breast (chopped)

1/2 onion chopped

salt and pepper -to taste


garlic powder

onion powder

chipotle chili powder

1 tablespoon honey (tip:  farmers market = great place to buy local honey)

The process is easy peasy- Drizzle olive oil in a skillet on medium heat, toss in your chicken and onion and let them begin to brown. Salt and pepper the chicken/onion to taste. You will want to add a “light dusting” of onion powder and garlic powder, heavy dusting of cumin, and hearty dusting of chipotle chili powder. Once combined add your honey and cook the chicken thoroughly.

Once the chicken is done, get your “fixings” all ready. The best partner for this chicken is a nice organic avocado.

2When filling your hard or soft shell add the avocado right to the hot spicy chicken. The butter avocado provides an amazing texture and flavor as it “melts” on your chicken.

3Then pile on the veggies and fresh shredded cheese! (shot glasses optional). 😉 Each taco clocks in at 5-6 weight watchers points. Pair with some fruit or a gorgeous fresh salad. Enjoy!
