Recipe- Lasagna Roll Up

Its been awhile since Ive had a recipe post here on the old blog and I figured tonight was as good of a time as any to post a family fave. And if you, like us here in VA, are expecting snow this makes tons of cozy comfort food left overs!!


Step 1- Combine 1 cup of mozzarella, 1 cup of grated Parmesan, and 2 eggs (whisked)


Step 2- Brown up 1 lb of organic beef (or chicken or turkey) with 1 diced onion, garlic, salt, pepper, and onion powder. Once your meat is cooked and seasoned to taste pour in 1 jar of organic spaghetti sauce (reserving 1/2 cup of sauce to the side).


Step 3- Boil lasagna noodles as directed, set aside (in water)


Step 4- Take your sauce reserve and lined the bottom of a glass casserole dish


Step 5- Take an individual lasagna noodle. Spoon on the cheese mixture and then meat sauce mixture


Step 6- Roll it up!!

Keep on rolling until you use up all of your meat/cheese/noodles. Cover with additional mozzarella and bake at 400 degrees for 20-30 minutes.


The finished product is some portion controlled cheesy goodness! Delish!
