I am feeling pretty thankful tonight. Sure, I have things going on in my life that are stressful, a few big choices in the works, and some unpleasantness that seems to be hanging over my head but I can truly still say I am happy for the positive things in my life.  Sometimes I think that’s kind of the key to making it through difficult times. But anyway…..

Tonight’s workout was 90 hot sweaty minutes of Bikram Yoga. Some nights I struggle through class and some nights it seems to come so naturally. Today’s class was one of the latter. Other than sitting er laying out for one set of camel I went into every posture and felt pretty great doing it. On night’s like this yoga is my happy place and I left in a post-yoga glow!

After last night’s disaster of a recipe I decided to keep it simple tonight. I also needed to keep it quick. Yoga nights are a little late so I need a quick and healthy option that lets me avoid eating an hour before bedtime. ;) That’s why I decided on a quick stir-fry.  Lean meat, whole grains, and plenty of beautiful veggies.

And of course, the star ingredient, chili paste. (This stuff is hot and I may have used a touch too much).

I started by adding said hot paste to my chopped veggies. I also added some salt and pepper.

As the veggies soaked up the heat, I tossed lean steak in a screaming hot skillet, browned it up, and set it aside.

Next, it was the veggies turn (I slightly reduced the heat first).

Once the veggies were softening I tossed the beef back in with a touch of soy sauce, 1 pack of raisins, and 1 tsp of brown sugar.

Then simply add to a serving of brown rice and enjoy! Ill also be enjoying this for lunch tomorrow as it made a ton.

    Yum! I used to make stir fry all the time – it needs to make an appearance back in my recipe rotation! Sending peace your way!!

  2. Chili paste is my hero, it adds such a spark to even the most boring meal!

    What color/brand nail polish are you wearing? Love it.
