Wheeeee!!!! Over the mid-week hump we go! Even though this is technically a short week I . Am. Over. It. There is nothing really bad going on. Work has been good busy and my evenings have been fine too. Maybe I am just excited for more SNOW this weekend or a quick road trip to WV to see my parents. Who knows? I do know that I’ll be glad to see Friday get here. Anyway, this morning it was business as usual. I started my day with a Berry Green Smoothie.

In the Mix

*1/2 Banana

*Greek Yogurt- non fat

*TONS of berries (blueberries, raspberries, and strawberries)

*3 heaping handfuls of spinach

*Some frozen mango and pineapple

It’s amazing that a HUGE blender of goodies turns into such a small glass of smoothie. Luckily I had this all consumed on the commute to work.

Lunch today was as lack-luster as they come. I got a chicken sub piled HIGH with veggies. At best it was Meh. I did, however, pick up my favorite lunchtime treat….. Garden Salsa Sunchips. I like to pretend they are healthy. ;) Seriously, I had budgeted them in with my WW points today and they were screaming my name!

Like I said earlier, I am a busy little bee at the office this week. I was totally feeling the late afternoon drag as I was out working in the community. Unfortunately,  when this lull struck I was in the middle of nowhere-ville so I had to stop at a tiny little grocery store. Randomly, they had a big display of BelVita breakfast “biscuits” on sale in the front. Done and done! These are pretty high points for a snack (6 WW pp) but they got the job done and I was all fueled for my run! I can see myself eating these along with fruit for breakfast in the future.

And about that…Its like a frozen tundra of misery here in Virginia today. However, the weather put a little bit of trickery out on me as it didnt look quite as cold as it was. I should have known I was in for it when I got to the trail right after work and it was abandoned.

Also, can we just say the setting sun did not help? GAH! I felt a little sore and grumpy-cat-ish on my run today. However, I was really pleased to check out my Ease Into 5K app at the end of my run to learn I ran my fastest mile to date! (Now please dont think Im trying to say it was fast because it wasnt….Just fast for me and Ill take it! Happily!)

Dinner was a recipe Ill post another night. We havent quite perfected it yet but I think Chipolte Chicken and Onions will be a go to recipe in our house from now on!! And speaking of recipes…. I am getting TONS of blog hits on my Panera Inspired Chicken and Wild Rice Soup recipe. Since it was so popular I want healthy copy-cats to become a regular feature… SO I ask you readers- What restaurant favorite would you like to see recreate healthy style and post on the blog?

    Smoothie in a Margaritaville mug! And now I want a margarita… Funny (or maybe less funny than “the start of a media campaign”) that the BelVita things were on display, they seem to have hit blogland pretty hard today! Congrats on your speedy mile!

      Thanks!! I did notice those BelVita biscuits popping up all over blogs yesterday after I got home from the office. Im sure its no coincidence they were on a huge sale/display at the same time they had sent them out for review. The pharmacy near my house has them on sale/display too. Overkill. :)
