A couple weeks ago the hubs and I had a house full of people coming over for movie night. Normally I have a difficult time cooking to all tastes- Some love rich foods, some love low cal foods, some are pro meat and others pro veggie etc. So, I sat down to come up with a “Crowd Pleaser Pasta” dish that appeals to nearly anyone. It was a huge hit at the party and I recreated it tonight for dinner. Since I am back to living solo Ill be lunching on this gem all week. Good thing it reheats so nicely!
Begin by browning up 1 lb of ground beef. (Ground turkey works great here too but I used the 93% lean Laura’a lean ground beef). To the meat add salt, pepper, garlic, and a touch of cayenne pepper.
Once the beef begins to brown add 1 large chopped onion, 2–3 chopped roasted red peppers, and mushrooms. Let the veggies soften slightly.
Once the veggies have softened deglaze the pan with 2–3 tablespoons of balsamic vinegar and allow this to cook out for 2–3 minutes.
Next, add in a light cream or alredo sauce. I took help from the store and bought a light good quality alfredo. This will combine with the vinegar to make a savory sauce.
Allow this to come to a light boil for 12–15 minutes. Then top your pasta (I tried the “white wheat” variety at the party but did regular whole grain tonight)
Serve with a side of green veggies (roasted asparagus would be perfect) and you have a crowd pleasing meal!
