Off the Grid

This week of classes has been great, but challenging. I did not anticipate how much time it would take up, especially with the evening assignments. I have been one very tired overworked girl! However, normal blogging will resume today including the 1/2 marathon schedule and upcoming race I “teased” in my last blog. Happy Weekend!!!

The Great (Spaghetti) Debate

So after a long day in class I wanted to make a really easy dinner. It doesn’t get much easier than spaghetti and garlic bread. For tonight’s sauce I used 99% fat free ground turkey breast, onions, peppers, carrots, squash, and garlic. I let all of this simmer together while I got in a quick workout [...]

School Days

Today it was “back to school” for this blogger. As part of my requirements for my MA in marriage and family counseling I must attend a couple “intensive” courses which have me in the classroom from 8:00am-5:00pm for an entire week!! I joked that I haven’t spent 8 solid hours in a classroom since middle [...]

Saturday started off great; busy but wonderful. The hubs made one of my favorite low point/low stress breakfasts an egg on toast that has been baked with a drizzle of olive oil. This is sometimes a go to dinner for me when I am exhausted. It also tastes better when he makes it, just saying.. [...]

Get S.M.A.R.T.

After last weekend’s goodbye party for the hubs reality sort of came crashing down on me like a ton of bricks. It’s had to put into words exactly what our relationship is like. We are best pals, a family, and a team. He does so much for me, big and small, that the thought of [...]

So Hard to Say Goodbye

I heard a quote once that I really loved. “Beginnings are scary. Endings are usually sad, but it’s the middle that counts the most.” As the hubs and I are approaching a new beginning there are many endings in our immediate future. Until the actual move itself happens for me the most difficult ending of [...]

Last Thanksgiving I made a post about two very different Thanksgiving recipes-one that was diet friendly and another…not so much. This weekend the hubs and I had two pot-luck type events to attend. For the first I prepared a low-calorie pasta salad and for the second an infamous chip and “dip” crowd pleaser.   Naughty–  Memphis [...]

Weekly Weigh-In #3

Not the best news to report today but I am down 0 pounds this week for a three week total of 17.2 lbs. I am not surprised or upset by this. I had two weeks of huge losses and I assume my body is taking a moment to catch up. I am going to stay [...]
