Sunday is usually a lazy day around our house. It is the perfect day to unwind from all of the weekend madness. It’s also a perfect day to try a new recipe and cook dinner from scratch. The hubs was working today so we ended up spending an entire glorious day at our house. Tonight I turned to my culinary hero Rachael Ray for a new dinner idea. I decided to make something that hopefully the hubs would enjoy so I ended up trying a “Mac and Cheese(burger) recipe.
This recipe is actually very simple. I began by combining 1lb of lean organic ground beef, grill seasoning 1/4 cup ketchup, and 1/4 cup mustard in a bowl.
Next, I shaped the beef mixture into several tiny “burger” meatballs and bake for 15 minutes at 400 degrees.
As the meatballs were baking I softened 1 chopped red onion in 2 tablespoons of butter.
To this mixture I added 2 tablespoons of flower, 2 cups of whole milk, salt and pepper.
Once this basic sauce thickened up I added in 2 cups of shredded 2% cheddar. Just a little tip I learned from my girl RR, if you stir in a figure 8 motion you end up with a smoother sauce!
While the cheese sauce was coming together I boiled a box of whole grain pasta and pulled my precious little baby sized burger meatballs out of the oven.
Finally, I combined everything in one big pot of yummy-ness!
The final step is garnishing your dish with tomatoes, pickles, and any other burger trimmings you like!
The dish was a huge hit and the best part is we have enough left to pack four lunches this week!!! PS: If you are counting WW points a serving of this clocks in at 13.

Its TEXAS!! I am loving all things Texas right now. I think its becoming a problem. Between this reality TV obsession and my undying love for the Dallas Cowboys I think it might be time to start planning another trip to the lone star state!! What do you think?
